Makeral Cutlets

Makeral Cutlets....or Makeral Chops....bit innovative ma way
Makerals 


Finely choppe Ginger,garlic,green chilli
Kashmiri chilli powder
Tumeric
Finely grated fresh coconut tbsp
Finely chopped onion
Fine vermicelli
Oil for frying
Boiled n mashed potatoes
Chopped corriander
Lil chopped mint( optional)
Corriander powder
Grated cheese(optional)
Eggs yolks whisked


Method:-
Boil potatoes n mash,add grated cheese,salt ,pepper powder make soft dough ..keep aside.
Clean n wash makerals.remove flesh and mince it.take a pan add Lil oil , chopped onion ,,ginger garlic chill paste,red chili powder,turmeric,chopped onion, corriander,mint,salt,corriander powder,, saute for a while....for 10 min....put off flame n let the mixture cool down...add coconut n mix well..now make small roundle of potato dough n press on palm and stuff the mixture ...close it and press gain ..make pattice...n dip in whisked egg yolks n coat with fine vermicelli n deep fry till golden brown....serve hot with sauce.

Paneer Hearts n Garlicky Paneer..

Made once on our family party ...it waz Super hit😊..n now its all tym fav starter of all in our fly..n have to make it ....party ho yaa naa ho

Paneer hearts
Paneer crumbled or grated
Ginger garlic chili paste
Chat masala
Chopped corriander
Very finely chopped onion
Red chilli powder
Corriander powder
Mozerrella cheese grated
Oregano
cummin powder
Salt as per taste
cornflakes crumbs
Apf paste
Boiled nmashed potatoes
Oil for frying


Mix above ingredients in a bowl ,except cornflakes crumbs and apf..now make heart shape small cutlets with mould n dip in apf paste..coat with cornflakes crumbs n deep fry till golden brown....serve hot with tomato sauce

Garlicky Paneer

Lemon juice
Lil sugar
Turmeric
Salt
Black pepper
Corriander
Oregano
Butter


Blend Garlic,lemon juice,Lil turmeric,salt,black pepper, n Lil sugar together to fine paste..marinate paneer cubes in the paste about 15 min...Now grease skillet with olive oil /butter and place each cubes to distance nfrythem like tikkas...or grease skewer n grill..garnish with finely chopped corriander n oregano optional... n serve hot.

Footi kodi

One more type of goan kadi...called as Footi kodi.......equally sweet,sour n spicy..but differs from malwani kadi.....people in Goa have this with the last round of rice ...or some drinks....however I enjoy both the ways....its my all tym fav kodi😊
Footi kodi

Ingredients
Warm water
sola
Hing (preferably strong khada hing )
Gul
Meeth
Hirvi mirchi( here in Goa we use gavthi tarvoti mirchi,)..
Limbacha ras


Method:- mix all ingredients well with warm water .it should be equally spicy sour n sweet.check wid the taste and add if required more.Serve specially with Nonveg thali.
Note:- It can be stored in jars/bottles for a week or more in fridge.

.Punjabi Samose with tamarind n date chutney....😊

For Punjabi samosa I followed Niru Gupta's recipe from Ndtv

For the dough:
maida
ghee or oil
ajwain
Salt
Water
Oil for deep frying the samosas


Ingredients
Boiled n mashed potatoes
ghee,jeera,green chillies, turmeric,ginger, red chilli powder, corriander leaves chopped,mango powder,salt,chat masala,green peas,fennel seeds,garam masala,chopped cashew nuts


METHOD
Chop the green chillies, ginger and the coriander leaves.


Mix all the ingredients for the dough except water and rub thoroughly.


Sprinkle water and make a hard dough. Set aside for about 10 minutes.


Divide the dough into round portions as per the size of the samosas required.


Heat the ghee and add cumin, when crackling add ginger and saute.

Add the rest of the ingredients excluding the final four and sautΓ© for five minutes.
Mix in the rest of the ingredients, including the potatoes and mix well.
Roll each portion of dough into a thin oval shape cut into 2 semi-circles.
Take a semi-circle. Apply water on the straight edge of the semi-circle. Hold the semi-circle in your hand, fold the straight edge, bringing together the watered edges, seal the watered edges into a triangular pocket. 


Stuff the potato mixture and then seal the upper edges.
Repeat with the rest.
Deep fry in oil till golden brown and serve with tamarind date chutney.


Date tamarind chutney:-
1/2 cup reseeded dates
1/2 cup deseeded tamarind
1 cup dark jaggery
2 cups water
Corriander,cummin powders
Black salt
Lil red chilli powder
Color red kashmiri chilli deseeded n made paste in warm water
roasted corriander seeds crushed
Roasted fennel seeds crushed


Methods:- Boil above ingredients except roasted fennel n Corriander seeds,...let the mixture cool...then blend to fine paste and garnish with roasted fennel seeds n corriander seeds...
Note :- u can store this chutney in airtight containers for a month in fridge..

Chicken Lal Maath.

Our Sunday special...jhatpat Chicken Lal Maath....within 10 min in cooker...😊..its verrrrrry yummy too

.I know that... all doubting about its taste...but believe me it turned out fabulous ..verrry yummilicious.. N I cud feed my hubby n dghtr this veggie with their fav chicken,which they never like to eat much....πŸ˜‚πŸ˜‚
Here's the recipe


Chicken Lal Maath
Ingredients:-
Lal Maath
Chicken
Tomatoes
Handful of corriander
Garlic
Ginger
Green chilli
Cummin seed
Corriander powder
Kashmiri red chilli powder
Lil malwani masala
Tumeric
Pinch sugar.
Lemon juice
Bay leaf
Onion finely chopped
Salt as per taste
Ghee or oil


Method:-. Wash chicken n marinate in lemon juice n salt n tumeric..keep aside for 10 min
Blanch tomatoes,Lal Maath,with garlic,greenchilli n corriander
Cool the veg n blend till smooth paste.


Take cooker,add oil,cummin seeds,bay leaf,onion,n ginger saute till onion turns brown,then add all masala powders,saute then add the Lal Maath paste to it..mix well add salt n Lil sugar mix well n put the lid for 2 min when u see oil starts floating up ...add marinated chicken..mix well n put the lid...give 8 whistles. N Ur Chicken Lal Maath is done....garnish with corriander n serve hot with Roti's

Vegetable cutlets.

Breakfast today....Sureshot way to ensure my daughter eats veggies. Vegetable cutlets.

INGREDIENTS :

4 MED potatoes boiled n mashed
1 beetroot grated
1 big carrot grated.
1/2 bowl green peas shelled.
5 green chillies
2 tsp ginger garlic paste
1 Tbsp chopped coriander.
Salt to taste
Oil
Semolina fr coating the cutlets.

METHOD :
Boil n mash potatoes.
Steam the grated beetroot n carrot in microwave for 5 to 6 mins without adding any water.
Boil n mash slightly the green peas.
Mix all of these.
Add paste of ginger garlic chillies n coriander to this.
Add salt to taste.
Make cutlets of the shape you like.
Roll in semolina or rawa .
Shallow fry in a pan.
Drain on absorbent paper.
Serve hot with tomato ketchup and green chutney.

Tree Pizza Roll

My daughter said "mumma aaj kuch different ho jaye....make for me something pizzy but not cheesy...".
I checked with the scratch available at home... Got all the below ingredients and... I made 'Tree Pizza Roll...its healthy too . Which also included potatoes, green mung .. which she doesn't like much...but its differentπŸ˜‰....she had it happily n cud'nt recognize these 


ingredients.😊😊😊😊

Tree Pizza Roll....
Dough:- 2 cup wheat flour, 1 tbsp Apf, 1/2 tsp baking powder,salt ,oliveoil for greasing n brushing...n home made ghee,water.make soft dough n keep for 10 min

Stuffing:- tomatoes,capsicum,green chilli chopped,,boiled green mung,potatoes sliced round n fried (was remaining out of afternoon brunch),cabbage,finely chopped ginger, tomato sauce, oregano,Maggie cube, Γ± farsaan (optional),salt as per taste,butter lil sugar.

Method:- take a pan,put butter..add onion,saute till turns translucent, then add ginger, chilli, keep sauting.then add all the ingredients one by one n saute till cooked..put of flame add tomato sauce oregano mix well n let the mixture cool...

Preheatoven @ 200 deg c.Meanwhile..make small roundlesof dough,n roll it with roller pin.make medium chapati.n cut stripes from both the sides,stuff the mixture in middle portion and close the stripes one on one from both the sides....now grease the baking trays brush olive oil over rolls n place it on the tray...bake for 12 min @ 200 deg.

Note:- I have minimized baking time as I had set it for 15 min.n rolls turned more brown.

Hawaiian Salad

Hawaiian Salad with honey mustard Grilled Chicken and accompanied with Garlic bread.. .

Recipe:
1 bowl Pineapple chunks canned one or if you are using fresh ( add 3 tablespoon of sugar to fresh pineapple chunks and pressure cook it till 3 vissles. .)
1 bowl red , yellow and green bell pepper cut into julians
1 small sliced onion
Cucumber 1 peeled and cubed optional
Letuce Iceburg 1 small torn

Dressing
Pineapple syrup 2 tablespoon
3 tablespoon mayonnaise
2 tablespoon coconut cream
2 tablespoon cooking cream
Salt a pinch
1 teaspoon sugar


Crushed pepper 2 teaspoon

Mix all ingredients of dressing and refrigerate it for 15 minutes.
In a bowl add all ingredients except letuce.. .mix with dressing ..and lastly mix letuce ...then top with grilled chicken chunks or boiled chicken chuks..

Chocolate Donuts.

Chocolate Donuts...juz with hot chocolate n not colorful sprinkles over it,as my dgtr dnt like it.....😊

Ingredients
125 gm Apf
30 gms melted butter
1 cup castor sugar
1 pinch salt
1/4 tspn baking powder
2-3 vanilla extract
1 large egg


Whisk eggwith butter nvanilla...Mix with dry ingredients and make a soft dough.rest it for 15 min.
Now take dark sweetened chocolate and melt it.
Now take the dough make its balls and round shape with a glass or cookie cutter.
Now make a small round hole in the centre with the help of a bottle cap.
Now deep fry..the donuts ..and keep aside on tissue pΓ per.
Now take one doughnut..dip it in castor sugar..and then in melted hot chocolate..now sprinkle colored sprinklers and silver beats..

Cheesy Shells. ...

Cheesy Shells...actually made by my dgtr ..age. 7 years....idea about ingredients,stuffing, cutting shells..etc..😊soo.recipe courtesy - my dgtr Saloni.....😊..feeling excited

Ingredients
For dough:-
All purpose flour/wheat flour,baking powder,salt,oiln milk

Stuffing:-
Thinly. Sliced cabbage
Carrot grated
Boiled potatoes made small cubes
Mozerrella cheese grated
Black pepper coarsely grinded
Chat masala,pinch sugar
Salt
Oregano


Make dough n let it rest for 10 min...meawhile in a bowl mix above stuffing ingredients...now roll chapati using roller pin..cut stripes only from one side n close one on one making shell like..as shown in the pic,...bast with butter n place them on greased tray n bake @200 deg for 8-9 min....serve with tomato sauce
