FOR THE FILLING :
INGREDIENTS :
4 medium sized potatoes boiled n mashed.
4 chillies small, bunch of coriander
Small pc ginger 4 to5 cloves garlic all ground to a paste
Half bowl green peas boiled .
Pinch of hing , 1/2 tsp haldi or turmeric
Salt to taste .
Mix all the above ingredients well to form a nice homogeneous mixture .
For the covering , I used readymade samosa pattis as they are convenient and samosas turn out super crisp.
METHOD :
Take one samosa patti . Put a little filling in one corner and start folding it along the edges always forming a right angled triangle.
Make a thick paste of wheat flour pinch of salt and water.
Use this paste to stick/seal the open end of the samosa.
Heat sufficient oil in a wok for deep frying the samosas. Once oil is hot
Deep fry the samosas till golden brown on both sides.
Serve hot with green chutney or tomato ketchup.
