Ingredients:
15 Lady's finger/okra (bhendi) cut into thin roundels
3 cups curds
A pinch of black salt ( optional. It gives a tang to the raita)
1/4 tsp cumin powder
3/4 tsp red chilli powder
Salt to taste
Oil to deep fry the lady's finger
Method
Wash the lady's finger and pat dry totally. There should be no moisture. Cut the lady's finger into thin roundels and deep fry in hot oil till crisp.
Mix whisked curds, half the cumin powder mentioned and half the qty of red chilli powder and half the qty of fried lady's finger salt nd black salt( optional) in a mixing bowl.
Transfer into a serving bowl and add the rest of the lady's finger and sprinkle red chilli powder and cumin powder.
NOTE: preparing the raita just before serving will keep the fried okra/lady's finger crisp. If not they'l become soft.
Completely dry the lady's finger before cutting and use a dry knife to cut it, that way the okra wont impart lot of stickiness.
