Season's first Gajar Halwa

Ing

1/2 kg fresh carrots ( about 4 long carrots). Wash , peel nd grate the carrots
3/4 cup sugar ( adjust to taste. I dnt lyk vry sweet)
4 tsp ghee + 1 tsp ghee
2 tbsp milk
Khava 1/2 cup + 2 tsp
Chopped almond as per choic
1/2 tsp cardamom powder


Method


Heat a nonstick/ ceramic pan , add 4 tsp ghee . Add grated carrots nd nd Saute on low flame for 5 min. 


Add 2 tbsp milk nd saute for another 5 to 6 min till the raw smell disappears. Add khava nd saute well till it blends with the carrots nd thickens. 

Once its mixed well add sugar, stir nd cook on low flame till the sugar melts nd mixes well . 

Stir continuously for another 2 to 3 min. Add cardamom powder , mix well. 

 Finally leave 1 tsp ghee from sides nd mix well to get a good flavor as well as shine/ glaze to the halwa.Garnish with chopped almonds or dry fruits of ur choice.

Note: Gajar Halwa is very versatile. Some cook it nly in milk while others use milk powder nd some use condensed milk instead of khava. I lyk the flavour of khava nd it also gives added flavor so i use khava.
