The Konkani Saraswat Cookbook. This is her recipe. The cake turned out
soft nd moist.I have tweeked the recipe a bit by adding grated cadbury
chocolate nd cutting down sugar to get the cadbury flavor
RECIPE:--
1 1/3 CUP MAIDA,
1/3 CUP COCOA,
PINCH OF SALT
1TEASPOON BAKING POWDER...
SIEVE TOGETHER. MIX 1/2 TSP BAKING SODA TO 3/4 CUP CURD AND SET ASIDE.
BEAT TOGETHER A LITTLE MORE THAN 1/2 CUP POWDERED SUGAR AND 1/2 CUP REFINED OIL. ADD 1 TSP VANILLA ESSENCE AND GRATED CADBURY DAIRY MILK ( AS PER INDIVIDUAL CHOICE) NOW FOLD IN CURD AND MAIDA ALTERNATELY INTO THE SUGAR-OIL MIX AND FINISH THUS.ADD 1/4 CUP MILK TO BATTER IF VERY THICK( DEPENDS ON HOW THICK OR THIN YOUR CURD IS) BATTER SHD BE DROPPING CONSISTENCY. BAKE IN OVEN AT 175 DEG. Centigrade FOR 25-30 MINUTES.
NOTE : Baking time varies from oven to oven. I had to bake it for 35 min. Do a first check at 25 min by piercing a skewer in the centre of the cake . If it comes out clean its done. If not bake further.
