Hot nd Sour Veg Soup

Ing:

4 Mushrooms shredded
1 Carrot skin peeled nd shredded
5 to 6 tbsp Cabbage shredded
3 tsps shredded bamboo shoots( they give an unique flavour. I did not add add since i did not have it)
2 tsp ginger juliennes nd 1 green chilli finely choppd(optional)
1 tsp oil
1/2 tsp white pepper powder
1 litre Vegetable stock OR water
1 tbsp dark soy sauce
11/2 to 2 tbsp black vinegar or any vinegar( adjust to taste)
11/2 to 2 tbsp Cornflour dissolved in 1/2 cup water
Salt only if required ( sauce contains salt so check before adding )
1/4 cup chopped spring onion greens


Method:


Heat oil in a wok ,add veg stock and bring to a boil , then add shredded ginger, mushrooms, carrot, cabbage and cook fr 3 min . 


Add bamboo shoots( optional) , soy sauce nd bring 2 a boil. Simmer fr 5 min. Add white pepper , add the black vinegar( or any other) to the soup , lower the flame. 

Stir in the cornflour mix and simmer for a couple of minutes until the soup thickens a bit.Add the spring onion greens.mix wel. 

Soup is ready 2 serve. Serve hot as cornflour is added


NOTE: 

The sour taste to the soup comes from vinegar.
Adding green chilli is optional. Add only if you wnt it spicy. Pepper powdr has its own spice.
Vegetable stock is very easy 2 prepare, il post recipe below. It really enhances the taste of soups.


Veg stock:

In a muslin cloth take 5 to 6 diced carrots, crushed ginger say about 1inch, 2 spring onions nd tie togethr . In a saucepan boil 2 litres water nd put the muslin cloth in it. Allow it to simmer fr about 35 to 40 min nd skim the surface if necessary. Ul get about 1 litre water.When the stock is ready strain it and use it to make soup.
