Khatkhatem

A very Traditional,authentic goan mixed vegetable curry....pure veg..we call it as shivraag...spicy,sweety n Lil sour ,non oily ,healthy.must recipe during festivals ,but I make it oftenly on Mondays n Thursdays....


Ingredients

125gms toor dal
Water as per requirement
Lil turmeric
3 drumsticks trimmed and peeled
Cashew nuts
Jackfruit seeds
Alkaul
Red pumpkin
Kovalyache vadiyo(sandge)
Raddish
Green peas dried
carrots peeled and cut into cubes
green beans trimmed and halved
Green peas dried
Alsane(red beans)
Ridge guard,
Ivy guard
Bottle guard
Cauliflower florets
Jaggery
Coconut
Kashmiri chilies
Gavthi chillies
Few peppercorns
Corriander
Salt as per taste.
2 green chillies

( and we also add if any seasonal veggies available)
For the coconut paste
freshly grated coconut
dried kashmiri chillies (or any mild variety of dried chilli) soaked in warm water for 10mins
Gavti chillies
Few peppercorns
Corriander
Tamarind
Turmeric...pinch


Method :-

First cook dal n dried green peas,alsane,jackfruit seeds separately each in cooker,
 

Clean,cut and cook all veggies with green chilliesseparately in other vessel,. 

Mix both together add salt,jaggery to it add cashews and boiled jackfruit seeds ,kovalyache vadiyo.

Grind above mentioned ingredients for coconut paste.. And add to the veggies....give one boil and put of the flame...serve hot
Some people give temperings of mustard seed ,hing and curry leaves...u can enjoy both te ways..
