Eggless choco coffee cake

Eggless choco coffee cake:


Ingredients:


11/4 cups All purpose flour
1tsp baking soda.
1/2 tsp baking powder.
1/4 cup cocoa powder.
A pinch of salt.
1 cup ground/ castor sugar.
1/3 cup melted unsalted butter / odourless oil.
1/2 cup milk at room temperature.
1/2 cup hot coffee ( 1/4 tsp instant coffee added to half cup hot milk).
1/4 cup thick yoghurt ( at room temperature).
1 tsp vanilla essence. 


Method: 


Preheat oven to 180deg C. Grease and sprinke little flour over an 8" cake tin. In a mixing bowl sieve the flour with cocoa powder, salt , baking powder , baking soda THREE tyms . 


This evenly mixes baking soda/ powder and results in a lighter and fluffier cake. Add the castor sugar/ ground sugar. Mix well. 

Create a well in the centre and add the liquid ingredients starting with the hot coffee , followed by melted butter, or oil , then the vanilla essence yoghurt snd finally the milk that's at room temp. 

Add the milk till you get a batter of dropping consistency. You may need a liitle less than half the cup of milk. 

Mix until just combined. If using a hand mixer just do it for less than a minute. 

Do not overmix , itl give a tough cake. Pour the batter in the greased pan and bake in the middle rack of the oven at 180degC fr 22 to 28 minutes or until a skewer when stuck into the centr of the cake cums out clean. Do NOT overbake. I had to bake it for 29 min. 

Baking time varies from oven to oven. Cool on a wire rack , turn the cake out of its pan. Cool completely .
